The 2016 Scaia “Torre Mellotti” Cabernet Sauvignon is a wolf in sheep’s clothing. The boys start by producing this cab similar to a Valpolicella by drying 50% of the grapes passamenti style for one month to concentrate the flavors and press the other 50% to retain freshness in the wine. The result is a wine that shows off its inkiness right away with an opaque purple color and fuchsia rim when poured from the bottle. The power is further unveiled with the dense aromas of black cherry, currant, black raspberry, blue-ish fruits, purple flower, chocolate and spice that pour forth from the glass. The wine is juicy with dark berry fruits that invade all parts of the mouth rounded out by silky leathery tannins and a suede like finish. A very enjoyable wine on its own yet pairs up nicely with a standing rib roast w/ roasted root veggies, a wild mushroom stuffed flank steak or chicken mole.
